Southern rock stuff is very prone to this, especially during live performances. Compare the studio version of Whipping Post to the one they perform, for example. I dunno if it's got that "chill" aspect you want but if you like solos then this is your genre.

Both of those bands are sort of descendants of the Grateful Dead who are legends in their own right

Allman brother's band and Carlos Santana both have some excellent guitar solos all over the place
