Don't get ahead of yourself. Since foods are still hot even after leaving the pan, they can continue to cook even once plated (this is why you let meats rest before cutting into them). Eggs are known for this more than other foods. If the eggs are done while they're in the pan, they'll be overdone by the time they're in front of the customer.
