Actually, he can. He can even enhance his running speed with the Force just like what we saw Obi-wan and Qui-gon do in TPM. The more recent books show that Vader actually retained all his physical capabilities (speed and agility) prior to his prosthesis. He isn't slowed down or restrained like the EU made him out to be.

Leia never had any real training like Luke did. Hell, by the time she realized she was a Jedi, she was too old.

There's also the fact she was raised as a princess and became a senator. She had a formal higher education and conducted politics while giving covert support to the Rebel Alliance. Luke, on the other hand, was a simple farmer. So when it came to being able to clear his mind and be open to the force, he had a lot less to silence. So combine her age when she realized she was a Jedi (a good 6 years after A New Hope) and the fact that she had a lot more on her mind than Luke did when he started training, and it makes a lot of sense.

Ok, my bromides, let me spin some head cannon for everyone and we'll see if my theory makes sense.

Everyone knows that the first sable fight we see is pretty lame. Furthermore, many of vaders fights in the OT are ponderous, at best. I know that the original reason for that is that lightsablers were supposed to be very heavy (made of star core tier density stuff) but what if we explain those slow movement duels with the force.

Suppose that those duels used not only the sabers but massive walls of force pushing against opposing walls of force. The saber would be pushed about by the will of the wielder while other force movements were pressing toward the opponent from strategic angles. Each combatant would be forced to ward off invisable force assults while making their own AND moving their sabers against their opponents own movements.

The early notions of the style were developed by Kanobi and Skywalker while they were still working together. They had not developed it to a useful degree by the time the mustifar battle happened so they used the Yoda style of saber fughting. In long years after, however, they learned to use the technique they had thought up together in an effective way.

Luke, too, was trained in yoda-fu so when Vader faced him, he had to use fewer and weaker flows to keep up.

Jedi Luke had survived a fight with Vader and learned a little of the style and finished Vader with a hybrid style of his own design.
