Recording is made around 1910's when Imperial Russia was still intact. Performance is a bit eccentric, but I found it charming.

Are you certain about kaval? I thought zurna was main middle-eastern counterpart of shawm. Kaval sounds more like an ordinary variation of flute.

Zurna, on the contrary, sounds more like shawm. It was also pretty widespread. There is also Iranian sorna and the Chinese suona. Even the names sound similar.

They are pretty loud, but European shawm is quite a versatile instrument. As much as it can be noisy, it also can sound very gentle. It's very noticeable in Renaissance music. Shawms and shawm-derivatives were quite popular at that time.

That's expected from slightly improvised dance music, it's supposed to be wild and energetic. That feeling may also be evoked because of this specific performance. The same dance by other performers may sound different.

Medieval music is interesting because of it. Arrangement and interpretation of source material can be very versatile and authentic at the same time. When you've been given note-sheet with Bach, you play Bach and nothing more. When you get note-sheet of Guillaume de Machaut, it can be a lot of things while still being Guillaume de Machaut. Just look at how many times Palastinalied was interpreted and people still don't get tired of it.
