Typical chopper set up is
>right hand - throttle (brake optional)
>left hand - shifter (knob, like a car's)
>right foot - brake (combined or rear)
>left foot - clutch
Triumphs sometimes have the shifter on the right and never clutches

My bike got stolen today :(
08 Harley Sportser, very customized to my liking and meant a great deal to me. I'm super bummed.
BUT...
I have insurance, so now it's motorcycle shopping time, and I'm down for basically anything. I'm really leaning towards a sportbike. I'm thinking I'll get between 5 and 7 grand back for it from insurance.

sorry, here's a bit of riding info so you might be able to fine tune your suggestions:

I see fat hipsters here in Iowa on little cafe'd 400cc UJMs. Buy something reasonable and you'll be fine. Hell, you'd be surprised how much fun you can have on a Honda XR100R (maybe 4 or 5HP at sea level with a sparkly-clean carburetor and air filter).

Depends on what type of bike: Cruiser or sport bike.
Cruiser? Yes, get bigger than 1000cc. You'll outgrow anything less really quickly, and cruisers over 1000cc are not overwhelming for a new guy at all. Less than 1000cc cruisers are also worse at highway speeds and hauling weight. My brother, who is a medium-large guy, learned on my 1600cc cruiser. I, on the other hand, learned on an 850cc cruiser and had to buy a new one in less than a year because I got way too bored with the engine's lack of potential, and I'm a small guy.
Sport bike? No. Sport bikes are fast as shit, even down in the 600cc range. You can pretty much get whatever sport bike you want, and as long as you can control the bike and your impulses, you'll have more than enough speed to stay entertained for awhile.

he should have not been choppy with the throttle. Suddenly and abruptly opening and/or closing the throttle jerks the bike around and upsets it, making it likely to wash out.

by slamming the throttle on and off he was weighting and deweighting the front wheel, motorcycle tyres have a "contact patch" that expands out with pressure, being jerky is giving huge spikes in the traction required to keep the front up but not allowing the contact patch to expand to provide it.
He's also accelerating as soon as he opens the throttle, you need to crack it to stop deceleration then just hold it steady for a bit before accelerating.
