Every parry should be answered by an immediate counter. Also, if parrying, they should not be waiting for the opponent's sword to contact their blade before countering. Also, the one guy is stepping backwards and off balance (on his back foot) in every "7 parry" (equivalent), the correct response to which is a thrust, or, if not allowed, a wrist-to-head strike on the center line. Of course, this is impossible because the opponent's back is bent way too far forward to have any kind of stability on those attacks.

Depends on a lot of things -- notably a lot of choreography will be done faster than the film speed (i.e. slower than it appears on film). This can prevent the illusion from forming since other visual cues won't be there.
Also it depends on the school of stage-fencing, of which the Japs are very disciplined -- you swing a sword differently (and use a different weight/balance sword) for raw speed versus kendo/fencing versus cutting practice or kata. Actually, come to think of it, it's probably this more than anything -- if you lever the sword high and early so it swings in a long arc it's a lot less likely to get the rubber-pencil effect since the fulcrum is so far inside your body, versus if you lever the sword when it's past your face as you would when fencing/sparring.

This is pretty much 100% incorrect, even as a generalization.
The proper generalization would be that the late-era dress katana had a soft core and hard exterior, which made it stiffer to small stresses than the late Medieval European two-handed longswords. The Euro 2H were in general soft exteriors around a harder core (both had quenched edges that extended from the hard steel part, of course), so they were more readily flexible.
And no swords from either continent from any era were meant to "clash" or "block". You "deflect", "receive", "beat", "parry", etc., which means that you don't take the full force or the full edge of an opponent's weapon but move it or move with it. Anybody who tells you otherwise is an idiot who has never actually fenced and has misread the historical manuals.

Something to consider is that many of these techniques come from manuals used to instruct individuals in combat for dueling or trial by combat, which was often to first blood (or a set number of bloods). Even in a fight to the death, a wound to the opponent can only hinder them, be it an arm wound that limits mobility or a head wound that bleeds into the eyes.
Also, those stabs may not look very damaging with blunt swords but with a sharp period longsword, you can get some very serious wounds with a thrust without a whole lot of power behind it. They're actually thrusting way harder than they'd need to to inflict serious damage.
Same deal with the cuts. They may not look all that impressive when people are beating on each other with blunt swords, and the cuts might not remove limbs if the swords were sharp, but you don't need to spectacularly dismember someone to seriously injure them. If you can hit quickly enough to injure your opponent while staying unharmed yourself, it's generally worth injuring your opponent then instead of waiting for the moment to ultra-kill them.
On the subject of countering, it's really much easier said than done and generally, if you're an experienced swordsman, especially one following the German schools, your movements should both attack and defend at the same time. It might not look like it, but the "winner" in each of those forms is relatively safe from a counterattack as his opponent is either off-balance, has his sword blocked, or cannot easily maneuver his sword to make an effective hit.
