Gimp doesn't have a way to set the cropping to a specific aspect ratio though. I would like to be able to set 1920X1080 as a number then freely stretch or contract the box, then have it automatically set the resolution of what I cropped to that.

The edges from selection were really good but I think I accidentally scaled down the guy with nearest neighbor giving it that sharp crunchy pixelated look, but honestly imo it's not that big of a deal.
