You should really use klwp to design your own widgets for the homescreen.
As for icon packs I think something like min, lines free, or glyphsy would look decent. You might have to put them in front of a blurred/darkened box though so there's enough contrast.

Check out zooper for widgets. There are a ton of "packs" you can download to add widgets or you can make your own. KLWP is great for full customization but has a learning curve unless you use other peoples presets.

White icons, this background, you could always make the icons go parallel to the bridge. :)
Also, stick to the white theme;don't insert two different fonts into one screen. Yellow and pink Minecraft font and some normal white font below that. Not a pretty sight, but beauty is subjective. 7/10.

Changing rom is super easy on most phones, but I understand why you're apprehensive; I was too. I'd recommend learning how to do it and finding a nice rom if you do decide to change.

You can get by just fine with Nova Launcher, then maybe KLWP and/or Zooper too. You don't need root or a custom rom to do most of the stuff here. Mine was made only with Nova, KLWP and TWIP icon pack. No root or custom rom needed, even though I do use one.

Officially red/green, but so many colours are ambiguous to me.
Pink looks like grey, purple looks blue, brown and green look the same, I only see about 2 clear colors (yellow and blue) in a rainbow and a blur between them.

I was in the airport once and the security person told me to follow the red line.

So I know you guys hate folders but HEAR ME OUT. I just use way too many apps on a regular basis for a good minimalistic design, so what I've done is put the most important apps of each group on my home page, and made it so that swiping up opens a folder to all the related apps. Hangouts opens to social apps, music to audio apps, etc.

I think I've found one i can settle with, the clock in the album player and some apps on the 1st and 3rd screen.

I know that the clock becomes useless whilst there is a white album cover so i have to find a way to fix it

Having nothing in the centre but lots on the top and bottom is, in my opinion, not so good. I would hide the notification bar, place a clock widget and your current icons in the centre and resize/change the icon for your app drawer, so that it fits.
