I started with the original /stay night from '06, so I would recommend starting there, especially since UBW ties into Fate/Zero (mostly in the last episode) so you'd be greatly benefited to watch those two back to back, imo

the main problem with '06 fsn made by deen, is that it adapts the Fate route of the VN, but it spoils stuff from both the UBW and HF routes.
