NES and SNES are easily pronounceable as words so there's no reason not to. Almost any time the initials of something make a decent word they become an acronym (NASA, NATO, UNESCO) rather than an initialism (FBI, BBC, DVD.) It's by no means always true, but the acronym wins out here.
