I know this doesn't count as kicking someone's ass personally, but it was so satisfying to see that EggRobo get destroyed by Mecha Sonic at the end of Knuckles's story. After everything he puts you through it's really cathartic

I beat him in the most humiliating way possible.
Go to the far side as Sonic, and just duck (not spin dash). Knuckles will glide over and land on Sonic's back, taking a tick of damage. Move to the other side and repeat.
You can beat him this way without ever rolling, jumping, or spin dashould charging.

The best way is to become Super/Hyper via the bonus stage at the checkpoint, and then stand still while Knuckles kills himself.
