Any of the first 3 Spyro games are colorful pretty funny and generally easy enough.

My mom was in her 60's when she started getting real deep into Pokemon, it was pretty awedome. She's also a big Puzzle Fighter fan.

Kirby sounds like it would be up her alley.

Won't run on a PSP but if you can get her a version of Animal Crossing that's a very good bet. Also professor Layton, though not retro.

Humans might be right up her alley. It's a puzzle platformer, very charming with fun puzzle designs great graphics and music.
