Shadow Tower

The Ridge Racer series is fun to play through and shows the rate of graphic improvement over the system's lifespan. Ridge Racer compared to Type 4 is really cool.

Tekken 3 and the Bloody Roar series are the best 3-d fighters on the system

Warhawk and Einhander are great.

The Divide: Enemies Within. It's basically super metroid in 3D on the PS1 and has an interesting development story made by people who made the Bevis and Butthead game on the Genesis.
