I feel like there should be more that spring to mind but the only ones I can think of right now are the Dragon Quest and Ogre franchises

Unironically ff3. I know this is probably everybody's least favorite game in the series, but I like how they mixed in jobs and progression. It's the only game where I feel more powerful just by switching jobs, and it's great.

Lufia GBA had a fucking incredible job system. You could easily break the game after mastering all classes, but doing that was a long and grinding process w/o cheat codes.
