ZDoom if you want high resolutions and mouselook. ChocolateDoom if you want the vanilla experience without Dosbox.

GZDoom is garbage because it ruins the original shading.

ZDoom has stopped development. If you want the original lighting, GZDoom lets you use ZDoom's software rendering.

Chocolate Doom and PrBoom+

GZDoom is good for maps that require it, but I'd otherwise avoid using it, as Its also a gateway to cancer like gameplay mods.
