SS uses more polygons. UW games are more like Sprites made to stand up straight like cardboard stands. A highres patch will probably made the UW games look all cartoony with "HQ" or SuperEagle filters.

It doesn't have the weird fishlens effect when you look down/up but the few actual 3D polygons in the game still look like untextured shit. The real improvements are more variety of walls and terrain, and more detailed sprites for the NPC/monsters.
On a side note didn't Nightdive say they were going to release the source for Shock 1? What happen to that?
