N64 has two.
I played the PCE-CD one. It's a kind of remake of the first game with different maps, altered fishing mechanics and a few other changes.

I liked the 2nd GBC one a ton, but I didn't really like the PS2 one.

What about it frustrates you? It's slow paced god damn do I love that game.

Only technically retro I also like the fishing in Animal Crossing.

I found the actual fishing to be really hard. I'm pretty good at games but maybe it's because I'm just not patient enough.

I like FPS and shmups.

Impatience and fishing are polar opposites. Assuming you're not trolling, why on earth would a person with your preferences want to play a super slow-paced game like River King?

Picked up King Salmon recently because why not?
Can't say the game is amazing but it's pretty unique and has good music. It's kind of neat that you can attack the other fishing boats by ramming them to protect your spot.
