Whats some good 3D platformers that aren't just colletathons? I'm looking for something where you're on an adventure and trying to get from A to B not collecting 100 rings and 10 token animals per level

Soul Reaver 1 and 2
Chameleon Twist had an optional Crown item you had to collect in every level to unlock the last world or something, but otherwise you just go from point A to B.
An action-adventure game which also happens to have a fair amount of platforming elements peppered throughout, especially the dungeons.

Between DC or PC which is the better version?

Do it. it's legitimately the best N64 game IMO.

Atmosphere is great, but the dungeons get tiring when you realise that most of the puzzles consist of "clear all enemies from this room to get the key for the other room." Also the environments seem kind of empty at times.

Medievil and Medievil 2 on PS1
Conker on Nintento64, Xbox
Croc 1 (croc 2 is collectathon)
Crash Bandicoot on PS1(no collecting required, I didn't know about gems until I had internet much later)

Don't forget Goemons Great Advebture. It's 2.5D except in towns but it's still great
Kingdom hearts 1 and only 1

It's not 3D though, which is what OP asked for.
