I like the pixel art, and the 32 bit consoles finally had the necessary color depth for really rich, good looking 2D visuals. It's a shame everybody was so hyped for shitty rudimentary 3D at the time that 2D was thrown under the bus.

It's not as if they went for 3D exclusively as a visual trend, guy; the new practical possibilities were the really enticing bit for proper devs.
Excluding genre hybrid and non-pixel-artsy stuff like Oddworld and Skullmonkeys, I guess Lomax and Rayman are the most common pure platformers that spring to mind

I love Super Tempo, the gameplay is nothing amazing but it gets the job done and it's probably the best looking 2D platformer of all time as far as I'm concerned. It feels like playing a really crazy cartoon (or a very cartoony anime) more than a lot of other games that try the same thing.

Lomax is really beautiful too but the style is less my cup of tea than Super Tempo

Super Tempo is not comfy, it's straight up insane.
Keio Yugekitai Katsugekihen has a couple of really really comfy areas, and not even everything out there is trying to kill you... in the first few levels anyway.
Don't forget Skullmonkeys
Little Ralph is a masterpiece, though not really good looking-
