Play intelligent qube. It's a fun puzzler with some dark and eerie overtones. The soundtrack is fully orchestrated bliss though

You should look at demoscene work for ps1. The music there is actually emulated realtime, unlike a pcm recording most game discs had.

While the wipeout games have fantastic soundtracks, you should seek out the original verstions from each artists' respective albums. The Wipeout versions are all cropped down to 3-5 minutes when they're originally double that length in some cases.

As for all suggested games I'll sort which ones have CDDA (very straightforward to play) and the ones which don't. For the ones which don't I'll try to access a sound test menu even with an Action replay (it will be a fun show I think, I love challenge ; )
