That would be impractical for most people, just copy the files after you installed it.
Could be there as an alternative download maybe... but half the point is to have the games ready to play, otherwise just get them in an abandonware site.

I beleive modern GOG installers are fancy self extracting archives, meaning you can extract the files you want using third party software, without running the installer.
