What are good civs for beginners aside from the huns? I don't want to get spoiled by the nomadic thing.

Depends on how you play really.
If you are more of a builder type give the byzantines or teutons a shot. Byzantines have stronger buildings, while the teutons' town centers, castles and towers have an insane huge range and can garrison twice as many units, also teutonic knights are OP as fuck in the original.
For an offensive thing (besides the huns) mongols are pretty good. A nice mix of maxed out mangudais, hussars and rams are pretty hard to stop, specially since their unique makes siege shit go faster. Or you can just drown everything in gothic infantry of course.
