Me and my friends did a few Co op runs over Zdoom, just set up a server there, you can even customize it with wads like player skin wads.

Zdaemon is the way to go. You can set it up to play mildly vanilla. (not really authentic, but concessions must be made unless you want to do things the hard way.)

use zandronum and set up your own server. Be warned tho if you decide to check out the doomseeker servers they are just dumb modded servers. No such thing as vanilla anymore for some horrible reason
