How the hell did they do the spritework in these games so damn well?
Every time I open one up I'm astounded by how damn smooth and fluid they all look, not to mention how fun and interesting the artstyle is.

SNK basically had an animation sweatshop creating assets non stop. A lot of its artists were traditional animation veterans.
I just beat the original Metal Slug yesterday. The art style and graphics are done well.
I was surprised there was only 4 way shooting instead of eight way shooting.
I also tired of the game play quickly. Frankly, it was repetitive.
The game is overrated in my opinion, but still fun.
7/10. Hopefully, the others in the series improve on the original.

In my opinion, the sequels are much more fun, they've got secret areas and stuff to explore, as well as new weapons and loads of unique enemies.
3 is my personal favorite, but others like X and 4 better.

The Metal Slug artists are technically from Irem, not SNK. They worked on games like R-Type 2, Undercover Cops, In The Hunt and Gun Force 2 (the latter two being nicknamed Metal Slug Submarine and Metal Slug 0.5).
Pretty sure they drew on paper before they converted it to pixels.

Simple. If you look closely at the examples you've posted, they work very much like cutout animations. Many pieces are actually static, but they're moved/rotated together in ways that create the illusion of movement.
Of course they're still well-drawn, with great attention to detail, but it's not like they drew every frame from scratch. More like, they drew a lot of cutouts, and moved them around on a plane.

What I love about the series is these cute little details that probably added hours onto their work schedule, are completely useless yet make the game so charming. That monkey dick .webm is another good example.
