Once you've gotten your feet wet a bit with some of the other games, and want something different:

Shin Megami Tensei
Final Fantasy Legend and Final Fantasy Legend 2 (the first two SaGa games, outside Japan)
SaGa Frontier 1 and 2
Dragon Warrior Monsters
Phantasy Star II and III (yes, most people don't like III, but it's an interesting game in terms of what it does. There weren't a lot of games that did a generational storyline around that time. Closest to that being Romancing SaGa 2 and Dragon Quest V)

Agreed about Persona. It took me a while to get in to each one (starting with 4 golden on back), but they're fantastic fucked games. No regrets at all.
