Which early era 3D games have aged remarkably well? By which I mean, which fully 3D games (no pseudo-3D/2.5D) can be played for the first time in 2016 and be adapted to very easily without having to put on a "this is old, get used to it" mindset?

This. Racing games age like finewine because the camera work isn't as complicated to handle as something like a platformer. You just stick the camera behind the vehicle.

Stuff didn't start to get "good" until the next generation. So PS2 and GC looks miles ahead of the N64 and PS1.
There are good looking PS1 and N64 games, but most of them are incredibly stylized (Mario 64, Banjo, etc), or are severely limited because of hardware (Stuff like Vagrant Story, MGS)

Sorry anon in the first post, but Twisted Metal aged like fucking shit. It's one of those series I always try my hardest to like but in my opinion the series wasn't playable until Head-On. It's on the PSP and PS2, so it controls modern enough, but it's also the proper sequel to TM2 so it shouldn't get looked over. In terms of just sheer playability, I enjoy Head-On more than Black.

I think OoT holds up really well, but it's hard to judge when you played a game growing up.
Crash Bandicoot 1 still holds up gameplay-wise, except for the awful save system. I played this game first in 2016.

It's okay as an eboot on a PSP Go, since you can save state. (Before you scream "savescummer" I only let myself make them on the world map since I'm not a filthy pleb.)
Downside is you can only have one save state stored system-wide, so making a save state in a different game will overwrite it.

This is /vr/. Do we frankly care how badly any game has "aged"?
It's hard to say any typical qualities of aging put me off. After all, I did get into the King's Field series only recently, and the series' graphics are notoriously aged, even by the standards of the year KF1 was first released.
I guess framerate would be the only thing I could complain about. Would be nice to play classics like OoT at a smoother framerate. Too bad the 3DS version of OoT sucks in every other regard. The revamped graphics completely disregard the spirit of the original design.

F-Zero X doesn't use MP3, it's just sequenced PCM like SNES.
If you want examples of N64 games that do stream MP3 there's Perfect Dark and Conker.
