I want to try XCOM: Apocalypse or Terror From The Deep but my only experience with the series is Enemy Within and XCOM 2. The dated look of it / style makes it look daunting. How does it play differently from the current firaxis xcom games? Is it [spoilers] fun? [/spoilers]

Play UFO Defense first, TFTD and Apocalypse are actually hard as fuck the first time through.
I suggest using OpenXcom to emulate it, as it lets you install mods and shit.

Well, there is no cover system. In general, cover is a luxury - but weapons are even more lethal. In general, expect casaulties.
At the same time, they are much deeper and complex games, and figuring out all the mechanics on your own is a really unique feeling that really no modern game can offer.

Don't do either of those. Play X-Com UFO Defense first.
TFTD is essentially the exact same game but harder, and Apocalypse... well, that one's a real monster.
