Harry Potter on GBC is kind of good.
I'm not sure which ones are on those but probably Fire Emblem.
God Medicine, a RPG that actually uses the Super Game Boy and is playable in English, thanks to the translation patch.

Final Fantasy Legend I and II are great. I cannot recommend them enough when JRPG's are concerned.

It doesn't get much better than Final Fantasy Legend I - III. All three are great games, although FFL3 moved away from the formula established by the first two games and went with more traditional experience levels.
For non-RPGs, there's Nobunaga's Ambition. Battle sequences involve turn-based grid movements, but most of the game requires you to manage the resources of your fief, which becomes more about economics than military strategy.

I don't know how they managed to fuck up the formula on this so hard. 1 and 2 were some of the most fun I've ever had with a monster collecting game, then 3 was a weird JP-onry affair (wasn't super great either) and the Joker games are mediocre as fuck.
