Fear Effect looks pretty great

Ridge Racer Type 4 is pretty nice looking. Very smooth cars and pretty good textures, but most racing games can afford to do that since they're rendering so little as compared to most other genres.

People say Silent Hill looks like shit but I think it's by far the best looking ps1 game. Something about the super realistic environments with correct proportions was something I'd never really seen before.

I was really enamoured with Shenmue's graphics when that was announced for the same reasons.
