I found a shiny Zapdos at 1413 resets last night but It kept waking from sleep really quickly and ate through it's pp causing it to struggle to death

Hunting for shinies in ORAS without a shiny charm is painful, but it's a welcome release from the fresh hell that was soft resetting for a shiny Deoxys in Emerald. I forgot that game had about a 1 in 8000 chance for shininess and decided to go for something a tad more reasonable.

SOS chaining

Hatched a porygon after 300 eggs, and a drowzee after 160 chain
I just got to that point where a 6iv is born and I know that putting it as a parent will reset the odds
I just got Pokémon sun and am relatively new to all this shiny hunt stuff, is there a specific place or guide to where I can get started?

I'd recommend you to play and enjoy the game, get familiarized with things first.
If you like shiny pokémon, the best ways to get them are breeding or SOS battles. Breeding if you want competitive Pokemon, since you can control natures.
This should cover everything about breeding in general, not just shiny breeding. Any other doubts, look in game mechanics.

Get the shiny charm by getting all the Pokemon in the alola Pokedex, it will help you with the odds. This is not necessary, things that are helpful. Get the oval charm to breed eggs faster and get more eggs faster. If you're riding a tauros to hatch eggs, use a Pokemon with Magma Armor ability in your party to hatch eggs faster.

There's always soft resetting if you wanna get those unique shinies.
The chances are always low for everything. This is why it's a hunt.
