I love the models for Pokken. I think there's a really nice compromise between realism and the original appearance of the Pokemon. Right down to small design details, like Garchomp having gills, or Mega Lucario's aura pouring out of the markings on its body. It also helps that each of the Pokken models were made with dynamic movement in mind, bringing them to further life.

The SM models are alright, but please fix Xatu, Swellow, Tropius, etc...

The models themselves don't need any changing, they're already extremely high-poly and future-proofed.

The animations and poses though for some Pokemon could use a little work.

This doesn't even exist. The models already are HD for future use since Gen 6. That's why they tank the fps on the 3DS. Well, some of the why. Most of the why being that they could have used scaled down versions of them and kept these in the back for something like the Switch but didn't.

Ga-Ole looks too plastic-y, but it works for the game. Just wouldn't for a main series.
Same for Pokken. The models look good, but only in the context of Pokken. Wouldn't be a good direction for the main series of Pokemon.

Trainer models would probably be done from GameFreak themselves.

Also rescaling textures isn't something that happens at the push of a button. It would be retarded to recycle texture sheets as they were on 3DS on a higher resolution display.

Sprites are much better than the current "future proof" 3D models because of the dynamic poses that could bring a Pokémon to life, while also remaining future proof, as well as only having to be accurate to the model from one viewpoint angle, while also using vibrant colours and shading to stand out. HGSS sprites were astounding for this reason.

Colosseum/GoD models tried to tap into this with Pokémon with unique, vibrant and fun idle poses and animations, but that was completely thrown out the window for XY onwards, that decided Pokémon now has to be realisticly boring for some reason, and just has Pokémon standing around like they just had a lobotomy, or worse, gliding idly. Worse yet, with washed out colour palettes. It's fucking awful.

Take Delphox as a fine example, a Pokémon which looks fantastic in sketch and design, but becoming a 3D model has made it look like absolute garbage, because it's not an animal made for idle posing 3D, it's a Pokémon. Let it pose, let it be individual.

If they overhauled current gen 3D models to have a little life, that'd be great, but we all know that isn't going to happen. The move to 3D was an inevitable change, but holy shit if it wasn't done in the worst way possible.

Right obviously. It's the same as the 3ds except without outlines, which would also look good upscaled. Pokken would require them to remodel and possibly reanimate EVERY Pokemon, again. Do you really want them to do that or do you want them to focus on making a game? The 3ds models are super hi-poly and they all have hi-res textures. They did this for a reason.
