Freeze dry and a ground type move hits 10 types. That is the most you can get with two types.

from this you'd need a fighting, ground and steel or poison (doesn't matter which since steel is SE against 2 types covered by fighting and poison only against grass which is the least of our worries)
that leaves us with water, fighting, ground, ground, flying, psychic, bug, ghost and dragon

you could go with pre gen VI so no fairies so

>dragon is only weak to dragon (which is SE on no other type) and ice
ice is great for the third slot since with freeze-dry you get 5 more attack you're SE against
however the remaining: fighting, psychic, bug and ghost can't be hit SE by just one move. we'd need a dark move for ghost and psychic and a flying move for fighting and bug
