Z mirror move combusken is pretty fun in the lower tiers. You can protect, then hit back with a Z move of their move type + get a bonus +2 attack.
Very gimmicky, but very satisfying when it works.

Z-Conversion Porygon Z was a tremendous amount of fun. Adaptability STAB on Thunderbolt with +1 to all stats is godlike. Only problem is that it always always requires a turn for setup.

I also liked using Z-Parting Shot Persian.

just set up a swords dance instead and carry a proper z move

Z-Splash Return Lopunny with Brutal Swing and Jump Kick for coverage.
Totally unresisted +3 attacks off 105 base speed.
Worked pretty well most of the time.

your choice of either z snatch or z me first krookodile.
Z snatch steals a status move (I had tons of fun stealing shell smashes back in early SM when everyone was using minior) and boosts speed by 2 stages, z me first takes the move the opponent was going to use, boosts its power, then turns it into a z move (z me firsted superpower becomes all-out pummeling, etc.). They're both good, but nowadays I prefer z me first. Z snatch is still fun with power trip, though.

Really doing a number on the current VGC meta, Snorlax don't eat berries after Belly Drum, Porygon-2 can't Recover, Celesteela don't get healed by Lefties or Leech Seed.

The +2 SpA is always a good unexpected boost too.
