There are 802 pokemon because there are two event mons in gen VII, Magearna and Marshadow.
So then you fill up the dex to 800 with old and new pokémon and get 800, and surprise, there are two more later down the line.

At least that is how it should have worked if the games weren't datamined and if they actually included the national dex

I like Ambipom as much as Aipom, but neither very much. However, they both look alike and not much really changes in a drastic way.
The same is less said about Lickitung, its evolution is more stylized and much less reptilian. I don't mind it all too much, I like any Pokemon to some extent (albeit Keldeo is not something I'd have in my team, personally), and Lickilicky is not bad at all to me, but comparing him and Lickitung is not all too fair.

Having said that, I prefer Pokemon that look like monsters anyways, rather than cute little things. Which Pokemon has had since the beginning, which I don't mind, so I won't complain.
