Gonna do a run of sun before US comes out, whats a good pokemon to use as my starter.

The real starters in SM are Alolan Grimer, Alolan Meowth, And Magnemite.
You can catch them very early in the game and so once I do I usually box my starter.

I'll second the Magnemite idea, though it isn't an SM pokemon, so I don't know if you are limiting options in any way.
