Mallow is the only one who doesn't have some grand goal. Lillie has a fear of Pokemon and has been working towards that. Lana wants to perfect Balloon and travel the oceans.

Both of those involve working with their Pokemon and others to get stronger.

Mallow just wants to become a #1 chef. She doesn't need to do a lot. She's not the strongest battler, looking to go out and fight Pokemon. She's there to look out for Lillie, cook, and have fun.

Not all companions need some grand goal. I'd rather her just be the one Ash hangs out with to do fun shit then have her get some dumb goal like being "_____ Type Pokemon Master" and never make headway in it like some other companions of his.

Battles hold less weight if their is lack of reason behind them. Thats why VS Ashs Kalos League battles were so exciting on top of the high quality animation.

It's the same with the final Ash VS Paul fight, there was a lot riding on that fight. It's not the best animated fight in the series, but because of the meaning behind it its significance and excitement rises.

The anime takes creative liberties all the time. A Pokemon standing in one place the whole time, especially one supposed to be seen as a threat, is not a good thing. They had a big forest space to work with.

Look at it like this. Litten is small and nimble as opposed to Lurantis being tall and burly. It could have made use of it's small stature to attack Lurantis from different angles like Pikachu did to Hariyama. Instead, Litten continued to get pounded. And then Castform came in and made it even more of a joke.

Also, Pikachu was standing right there as well doing nothing, it could have defended Litten on multiple occasions.
