Humans in the Pokemon world have natural inclinations to psychic powers, and some have access to aura powers. Further, most Fighting-type move are martial techniques that could easily be matched by a trained fighter. Dark type moves are split between "corrupt" aura abilities and underhanded tactics, both of which humans are capable of. Humans that don't hone psychic talent, harness aura, train in combat, or become sneaky bastards would be Normal-type.
