much like dragon quest, sometimes, pokemon that evolve by combining will do so mid battle, like the aforementioned 12 digletts becoming 4 dugtrio.

This was definitely not in DQ5. You got monsters on your team by defeating them in battle and gaining their respect. Then, they leveled up normally like the human characters. Maybe you're thinking of Dragon Quest Monsters?
