It's meant to be testing out new 'mons in Randoms and having fun with RNG in Metronome. When they update the Battle Channel with actual competitive formats (which they had BETTER DO SOON) it'll be easier to grind for BP as you're mostly in control of what you use and what's good, and the payoff for it will have actual use then. There are already a lot of viable competitive items available in the field i.e. Lefties and Life Orb that you can use when the update launches. Just have a little fun for now. You underestimate how long these massive updates take. They've said that it will be a few months, maybe early 2018. Implementing pretty much a whole new region takes a lot of time. The League also took a while to get launched after the 8-gym beta, and that added very little in comparison. I wish they would give us small updates such as more Battle Channel modes or an expansion to the Wonder Trade pool, but until then we just have to wait. And when it comes it'll be worth the wait.

True, as far as new content is concerned, it wasn't much, but it was in itself a fairly big part for the future update being made now.
Considering that I'm pretty sure Ebin is at least half the size of Fochun, plus adding more Battle Channel modes, it'll probably be a while.
I think most of the devs are of the opinion that the game and story updates shouldn't be broken out into tiny demos, and so prefer to have at least most of it done and tested before releasing any. That being said, I think an update that included more Battle Channel modes, and maybe some of the more pressing bugfixes, might be a suitable middle ground.

I've got both Fazeagle and Diobat from WT, so I was thinking to add them to my team, but I'm not sure about the sets.

No such list but every non-legendary Fochun and Ebin Pokémon are catchable. The only Kekkoh mons in the wild are Hornigiri, Sesquatch, Skeletroll, Griffawork and Boarnograf. Tentaquil is gift and Sadrog and Wastenaut are in-game trade.
