Even if Mankeys didn't still exist and this evolution were actually evolution and not metamorphosis, Primeapes, having evolved from them would still technically be Mankeys.

Just as marbles are still glass and an iron carbon steel is still iron and carbon.

Even if Mankeys didn't exist after the evolution, Mankeys would still technically exist, in the Primeapes, in other words.

Same applies to humans too. We are not just evolved from them, we ARE monkeys and we ARE apes, and we ARE mammals, etc. despite having traits that also define us as being human.

None of them would be extinct as long we existed.
