Kabutops and Omastar are alright, swift swim and shell smash for Omastar and swift swim with 80 base speed for Kabutops plus Z moves make them usable at least.
And since Aerodactyl is Aerodactyl, I'd say kanto fossils are the best ones are the moment.

the gen 1 fossils are undoubtedly the best fossils
the only ones that even come close to challenging them in terms of overall usefulness are rampardos and tyrantrum, both of which are kinda mediocre ru level wallbreakers that suffer a lot from being too slow for how frail they are
whereas both omastar and kabutops have multiple different niches they can fill and sets they can run both in and out of rain and aerodactyl has been historically one of the best leads in the series, not to mention the mega
so you kinda cant ask for them to be much better than they are

rock types in general are kinda butt
mostly because of gamefreaks idea that they need to be slow, or defensive, or both when most of their strengths lie in the opposite direction where things like aerodactyl and terrakion are
kinda like ice but less dire since they actually do have SOME defensive utility

you can see how like tyrantrum specifically could be a lot better if its stats were even slightly refocused to be either fast enough to dragon dance or bulky enough to take special hits outside of sandstorm
