I'm honestly not sure what a canon team would be for Sun. I think the best thing you could do is some opposite of Hau's team.
He uses Raichu, Flareon, and Komala. Maybe you could use some other Alolan form (Persian, since Meowth is another major anime character?), an Eeveelution from the Eevee egg, and then another unevolved Alola mon. Maybe Pyukumuku since there's that Pyukumuku chucking minigame.
You could also use the Aerodactyl from Seafolk Village, but that's far in.

I'd add Toucannon, since Pikipek is your first forced encounter. Also Zygarde, obviously.

And maaaaybe Bewear and Mimikyu. Both are fairly popular...

There is also Alolan Exeggutor, forced encounter with Lillie.

Nihilego is also an option, but It'd have to be post game.

Eevee, Porygon, Aerodactyl are giftmons, so use those. Poliwhirl, Machop, Bounsweet/Steenee, Alola Golem and Happiny are available as in-game trades so pick one of those as well.
