Why not just create a special Z-Crystal for Electrode which buffs Explosion to 500BP, but faints it just like if it were to use Explosion otherwise? "Electrodium Z" or something like that.

They won't because of VGC.

I've never understood why people use Explosion/Selfdestruct to begin with since it KO's your own pokemon. Is it really worth the sacrifice to hopefully take out one of your opponents mons? Or is it used just for fun?

It's more of a doubles thing. You'd use it with your ally using protect, or switching out for a ghost type.

You can switch one of your ghosts into it.
Or use protect. Or be behind a substitue.

Now also, with golem's galvanize explosion, the same as above applies only that with ground types, and also this kind of explosing usage can threaten to KO your foes since electric STAB + galvanize boost + item + 120 attack is not going to be taken well if they don't have ground types or lightning rods/motor drivers/volt absorbers.
