What Pokemon would be edible? And what ones would be actual food items? You'd need to consider things like

>How common it is
>How viable it would be to make into a good meal
>How delicious it'd be

Obviously no one will eat a Jynx, but people might a Magikarp. And Qwilfish could be a rare delicacy difficult to prepare.

What would the edible Pokemon of each generation be? How good eattings would they be, and how would they be prepared?

The roasted Espeon is served with asparagus and mashed potatoes, and presented in as attractive and tasteful a manner as such a dish could be. The meat is tender, but with a distinct texture, preventing an unwanted mushyness and giving my teeth something to properly sink into as the juices exude from the tissue pouring over my tongue.

With each bite my senses are stirred as residual psychic energy within the Espeon’s tissue flows into my brain, and memories of the creature’s life drift into my thoughts like the scent of incense in a crowded room.

I see, feel the warm hand of the Espeon’s trainer gentling his ears, the soft green grass beneath his paws as he scampered about the park chasing Beautifly, the rush of emotion and sensations the day he evolved, the titillating frenzy of joy and affection as he, under the setting sun, nestled lovingly the Sylveon he adored so passionately.

And the fear, the sadness, the regret, of all of this being taken from him, of being trapped in that slaughterhouse knowing he was going to die, of the knife sinking into his throat in that brief, agonizing moment before the light of his little life blew out for eternity.

I could taste it all, feel it all, that whole lifetime playing out across my imagination and my taste buds as the slain Espeon’s life nourished my own.

Best meal I had ever had. Well worth the thirty dollars.

Miltank are already confirmed for using their milk in all sorts of dairy dishes. Tauros would probably be used for veal and beef production. Lapras's Pokedex entries already state that it was hunted to near extinction and have protective programs set up around them, they never state that the hunters butcher them for food but that's the implication. Any sort of Pokemon that looks like seafood would be harvested for consumption, Poison types are probably rarer dishes/prepared with more caution. People living out in the rural areas probably shoot or catch the regional rodents and game birds like Rattata and Pidgey for stewing and roasting. All the Pokemon that look like sheep, goats, horses, camels or deer are probably used for milk, meat and hides by tribes or people living in areas unsuited to grazing cattle.

We know for a fact people consume tropius bananas, and cherubi, wishiwashi, basculin, and crabrawler (or at least its claws) are described as tasty, so it's implied people have eaten them at some point. Farfetched is described as delicious in one of the earlier dexes. The blissey line produces edible eggs. That's all that comes to mind. Like >>32658084 said, you can probably eat any mon if you're hungry enough, but I just wanted to list the ones we know for a fact are consumed in some fashion.

Reminder that according to the anime Magikarp is borderline inedible. Nothing but scales and bone, and not very tasty. While I typically ignore the anime, this sounds perfect for Magikarp as it has no positive traits.
Based off the games it is a highly invasive species whose only evolutionary trait that allows them to succeed is their ability to reproduce fast enough to make a rabbit jealous. Magikarp multiply at a rate that makes them impossible to remove without considerable human effort or an extreme natural disaster.

I also suspect Camerupt meat and other Fire-types might have an innate spiciness to them.

Okay, okay, maybe it wasn't just guns. Humans are pretty ingenuitive, and that's why we're the top of all food chains right now. Considering a Team Rocket Grunt tanked a point-blank Hyperbeam from Lance's Dragonite in HG/SS and survived, I think it's safe to say that humans in the Pokemon world are considerably stronger than real ones. 100's across the board seems about right, and i'm willing to bet elemental bonuses/resistances apply as well, given that there are Psychic-type, Fighting-type and other 'variants' of humans in the Pokemon world.

No non-pokemon animals are referenced. I believe there was an episode that mentioned a fishing village who used to eat the pokemon they fished up and as long as they threw it's entirs skeleton back in the ocean it would regenerate. If all pokemon can come back to life and be as good as new as long as all their boned are fine then this could be why it's so hard to kill pokemon and why humans are ok with eating them.

That fish story was one of the things you can read in Canalave Library in Gen 4, actually. Also, it's said to be a folk story, which means it isn't necessarily true.
With that in mind, one could assume that people just created the story to justify eating Pokemon, because you're not actually killing them based on the story's logic.
