They are actually being quite generous with new forms recently. I wouldn't be surprised if they started giving old Pokemon cosmetic changes to go alongside regional variants that change types.

I think they'd probably have to worry about all the different forms then going forward, but with models it should be far easier than with sprites. Just automate it so the pattern appears on the same spot, probably like Spinda's programming.

They didn't drop them entirely, they just started having a few big differences like Unfezant, Jellicent, Meowstic, and Pyroar instead of a bunch of small ones.

This was a weird case. With Gen 4, they retroactively went back and added those differences, while also introducing more 'stark' pairs.

Gen 5 and 6 had a few of the stark differences, but never went for small changes. Gen 7 didn't introduce any sex-specific designs.

Will go out on a limb to say they stopped with unnecessary dimorphism once they settled on a style of 3D models. We know the 3D models were being eyed during Gen 5, with the excuse being 'it doesn't yet match Sugi art'.

It's one thing for an extra sprite, it's a whole other can to have 20 small-abdomen variants models, and Game Freak doesn't seem savvy enough to break those parts down and reduce redundancies.
