Pokemon starters are generally Fire, Water and Grass. Is there any other typing that would work just as well for starters too?
Psychic, Fighting and Dark. I would love to see GF do that but it'll never happen. Delphox, Greninja, and Chesnaught don't count.
Ghost - Psychic - Dark is a common one people go for. I also just thought then Ground - Electric - Water, and Ice - Flying - Fighting

Not really. No other three type combinations have equal strength, weakness and resistance like Fire/Water/Grass do. They either have immunities, strength but not resistance, resistance but not strength, weakness but not strength, etc. It's the only perfect triangle.

So many Darkfags. Best alternate starter ideas are either Fighting, Rock, and Flying(with or without an irrelevant secondary typing)

Rival battles have become so rare and unimportant in the games that I'd say the 3 starters don't even have to be in strength/weakness-triangle.

Even at the verying beginning, grass/poison means grass has an uneven resistance to itself compared to fire and water
water/ground removes water resistance and doubles grass weakness
grass/ground loses both water and ground resistance, gains SE STAB vs fire
water/steel loses grass weakness, and fire resistance
