Grinding in Sun/Moon...how do you guys do it? The battle buffet

Most people just use the pelago glitch or rare kitchens, takes 5 minutes bruh.
Also the battle buffet updates to better trainers after you beat the league, and you should use the XP share if you care about your Pokemon levels enough to bother with grinding.

Personally I use a rare kitchen, haven't tried the pelago glitch much. Bewear also give a lot of exp if you deliberately want to grind wild pokemon.

nevermind..it's postgame... plus it doesn't involve battling... guys i'm looking for something like the old battle chateu, or something to actually not feel like i'm a cheating loser

A rare kitchen is not postgame, it's part of the festival plaza. Rather easy to get if you do the global missions.

Regardless, you aren't cheating. And if you want a challenge (since it doesn't seem like you've beaten the game and you turned exp share off), don't grind at all.
