There are lot of wrong headcanons about Zygarde going on /vp/ recently. I will try to settle this down using facts instead.

Zygarde 10% known as Zygarde Canine or Zygarde Dog is based on a Truffle Dog, truffle is very common in Germany, France, Italy and Spain and both dogs and pigs are used for its research.

Guess where the truffle grows and is found? Underground. Only special legendary animals can find it, therefore Dragon/Ground is the only fitting type for it and fits it very well.

I hope you are still hyped because Corocoro and Pokemon official sites haven't revealed all Zygarde forms yet. In fact it misses another form ranging from 11% to 99% and is clearly based on Dragon/Ground type Truffle Pig.

I'll try to sum up:

They are not animals or plants, just like truffles.
