On some mons it matters. If you have even HP, you can't use substitute 4 times so you won't be able to activate a berry. If stealthrock does x4, you can switch in twice and live instead of dying on the second entry. Might be a few more instances but don't know.

No idea about Comfey though.

As that other anon said, it helps for Stealth Rock.

A mon's HP number actually affects the healing and damage they take from passive sources. It's very small, but it matters if you want to optimize.

A mon with Leftovers will regain slightly more HP if their HP stat is a multiple of 16 +1.

Stealth Rock deals slightly less damage if your HP number is odd. If Volcarona has 200 HP, it takes 100 from Stealth Rock each time and dies on the second switch in. If it has 201, it has 1 remaining instead.

It's also used to activate Sitrus Berry after two Subs, stuff like that.
