They should really go in-depth as to exactly how society and economics works in the Pokemon world. Like, every child has the opportunity to go out on an adventure as they please, and there's free healthcare for your Pokemon, too. How does this work? And how do they live knowing that there are creatures that can control elements in the universe?

Can't say for sure, games offer you little to no clues.
Silph Co. is the most powerful corporation in Kanto and they manufacture everything the Pokemarts sell.
All Pokemon centers in a region have the same design, so they are run by the same corporation or government.
Outside the Parfum Palace in Gen 6 you could see people complaining about the owner's wealth. Lumiose city has some other references as well.
Everybody can live a decent live from what you can see, but some trainers are clearly wealthier than others.

I think it's more disturbing that in their society children are expected to go on a journey across the land at the age of 10. Is education not a thing? Do the elite encourage the journeys so their children get educated and stay in power?

Unova is the only country where prowess at Pokemon seems to actually equal political or social influence, and their journeys seem to start at later ages.

Pokemon society is pretty much based on communism (by the original definition of endgame society) with democratic/libertarian values mixed in.

Technology and means of production in the Pokemon universe are so advanced (possibly because of Pokemon contributing to many groundbreaking scientific discoveries) that any basic commodity, food, healthcare, possibly even housing is easily available, but people are still free to engage in any activity they want as long as they don't endanger anyone.
The real question is how is this world geopolitically organized, are the regions independent states or provinces of a larger nation? Or possibly there is a world-wide central government?

This. In gen 6 some NPC says they cannot sustain their society if Pokemon aren't there.
Plus, consider that there are much less people in the world, and it becomes evident because how easier becomes for people to trust each other, and to send their children away and trust they won't get raped or murdered in the process.

Now, you can't test which would the impact on the economy be if you sell the 200 potions they gave you in OR/AS, or how would if be if you tank it by buying 999 Max Repels, and I don't remember any NPCs talking about supply and demand.

It's implied there -was- a huge war, so I figure a lot of the population got killed off. Whatever powers that be that remained probably made the pokemon leagues and gyms to become places to put anyone with violent tendencies.

Government wise we've seen there are at least Mayors, and as other people have mentioned there's businesses that make and produce things(but seem somewhat happy to share some of their things).

Probably only slightly - the game's internal logic doesn't have dips from over-product, and potions seem relatively important- selling them to a store for the sell-back cost means they turn around and sell them to other trainers/people.

Not everyone goes to become a trainer. Most people in the pokeverse are actually doing other things, they just battle you because pokemon like to battle to get stronger and it's friendly competition. In most of hte game lines you're 10-16, and had family who were trainers so you become one too.

I like to think that ten is the youngest age that you're allowed to get a trainer's licenses and sign up for the pokemon league, but some trainers wait til they're older to go on their journey, or their parents hold them back for obvious reasons.
explanation for preschooler classes: They're not official trainers or allowed to challange gyms, but there's no laws about having pokemon battles with your parents pokemon.
